SCOIATTOLO, FRESH PASTA INNOVATION GOES GLOBAL: TWO LIMITED-EDITION RUNS FOR THE UK MARKET TO MARK SPECIAL OCCASIONS

Scoiattolo is launching two new limited-edition products on the shelves of Morrisons, one of the UK’s leading supermarket chains: a project that showcases our ability to innovate in terms of format, recipe and production process, interpreting international tastes and consumption occasions without ever losing our Italian identity.

Two special editions developed in response to feedback from the UK market

Scoiattolo has developed two new products exclusively for Morrisons, one of the leading British supermarket chains, with the aim of offering distinctive products that enhance the deli counter and delight consumers.


The launch at Morrisons took place in October 2025, following months of collaborative work, with several Scoiattolo brand products available year-round, designed with a targeted positioning tailored to the British market. The trust placed in us by the retailer’s buyers and category managers has enabled us to strengthen our brand’s presence in the UK, where we have also been stocked on COSTCO shelves for some time.


Together, we have therefore developed two exquisite, delicious and distinctive products, available for a limited period and linked to specific occasions, with the aim of intriguing consumers and diversifying the range. The first product, available until 9 March, is a heart-shaped ravioli designed for Valentine’s Day. It is made using a specially designed mould, which allows us to produce a portion weighing approximately 16 grams with a wide central cavity, capable of holding up to 50% filling, enhancing its flavour and texture.


The filling, inspired by Anglo-Saxon tradition, is made from beef cheek slow-cooked in a casserole with fresh bay leaves, a mixture of sautéed vegetables and red wine. The meat is cooked whole, without being minced, to preserve its natural texture, which is also visible when the ravioli is opened. The intense colour and rich aroma immediately bring to mind the slow-cooked dishes typical of British culinary tradition. A gourmet offering designed for the deli counter, launched at a promotional price of £2.50.


Alongside the savoury version, we have developed a second sweet offering, available from 2 March until 6 April, to coincide with Mother’s Day and Easter. In this case, we have reinterpreted a classic shape such as the Gran Panzerotto, adding a dark chocolate centre.


The idea stems from a desire to explore the world of fresh pasta from a dessert perspective: a sweet raviolo with a filling that evokes the experience of a soufflé – creamy and enveloping – which melts during cooking, offering a surprising result that remains largely unexplored in this category. A product designed to wow the target market and expand the range of occasions for consumption.

An ever-expanding international presence

For us, these two limited editions are a concrete example of how innovation, market insight and collaboration with the customer can translate into bespoke projects with high added value.


Today, exports account for around 70% of our turnover, confirming a strategy strongly focused on international markets. Growth is driven in particular by the USA and Canada, where we have been present since 2019, and by our entry into the Asian and New Zealand markets from 2023 onwards. We have also been collaborating for years with some of the leading retail chains in the Netherlands, France, Denmark, Norway, Sweden, Spain and Germany.


Export volumes have grown significantly, rising from 11.3 million kg in 2022 to 14.2 million kg in 2024, with a total value exceeding €48 million. A result built up over time thanks to our strong Research and Development capabilities, a tailor-made approach and a range that now includes over 250 recipes, 30 formats and 50 products under the Scoiattolo brand, sold worldwide.


A journey that continues, with the aim of taking the quality and innovation of our fresh pasta ever further afield, interpreting international markets with an eye to the future and our roots firmly planted in Italian tradition.
